Stuffed Mushrooms

Autumn is the season of mushrooms by excellence. However, in addition to sautéed with garlic and ham, how can we eat them? Here are several recipes for mushrooms stuffed with various ingredients.
A Council with respect to mushrooms: If you're not an expert, don't go to the field to collect them. Not all mushrooms are edible, some are hallucinogenic and others are toxic for the human being, to the point of causing death. Stuffed Mushrooms

Option 1: mushrooms stuffed with seafood:


Ingredients (for 4 people):

24 mushrooms "Pleurotus ostreatus" medium size
1 red pepper
2 onions
1 crab or the Cantabrian about 750 g-noca.
6 baby squid
24 small shrimps or prawns
Parsley
Oil
White wine
Fish broth
Flour and egg for Breading
Salt

Procedure:

Chop the onion and bell pepper and sauté in a pan until they are thoroughly cooked.
Add seafood, well minced meat and let it cook all together.
Once this is done, on each mushroom place a little of the filling of seafood, cover with another mushroom and coat in flour and egg.
FRY in oil.
Apart from that, make a sauce seafood, with oil, onion, parsley, white wine, fish stock and a point of flour.
Once fried, place the mushrooms in a pan and pour the sauce over them.
Boil briefly with the sauce and serve immediately.


Stuffed Mushrooms

Option 2: mushrooms stuffed with minced meat and cheese:

Ingredients (for 4 people):

300 g of minced
12 mushrooms
1 carrot
1/2 Onion
1/2 Italian green pepper
4 spoonfuls of homemade tomato sauce
12 slices of goat's cheese
Mozzarella
Basil
Salt
Black pepper
Olive oil

Procedure:

Saute carrot, onion and bell pepper sliced in a pan with a little olive oil.
Add the minced meat, season and expect to take color, without making it too much so that it is not dry.
Pour the tomato sauce and basil. Mix well and remove from heat.
Preheat the oven to 180 ° C
Clean the mushrooms, washed them and removing the skin and the sticks.
Place the hats on a baking tray and salt them.
Fill the mushrooms with meat mixture and cover with a slice of goat cheese and a little mozzarella.
Bake for about 25 minutes and serve immediately.

Option 3: mushrooms stuffed with ham and cheese:

Ingredients (for 2 people):

A tray of mushrooms
100 g of serrano ham
100 g Parmesan cheese
1 egg
Flour
Salt and pepper
Oil

Procedure:

Wash and dry the mushrooms well. Check that they fit one over the other
Fill the mushroom with a slice of ham and a bit of Parmesan cheese, taking care not to get out on the sides that do not jump to fry them. Cover with another mushroom.
Beat the egg.
Mushrooms in flour and egg batter and fry them with hot oil.
Remove and drain well on absorbent paper
Season and serve hot


Stuffed Mushrooms

Option 4: mushrooms stuffed with blue cheese:

Ingredients:

500 g medium-sized mushrooms
200 g of blue cheese
Sweet paprika
Olive oil
Salt

Procedure:

Preheat the oven to 180 ° C
Wash the mushrooms and salt them.
Place half of the mushrooms in a baking pan previously greased with olive oil.
Place a little blue cheese over each mushroom.
Cover with another mushroom of similar size, as if it were a sandwich.
Bake for 20 minutes at 180 ° C.
Remove from the oven and cover with a little paprika and oil.
