2 Delicious cakes without gluten or lactose

Allergy sufferers tend to have many difficulties in preparing their daily menus, and, especially, desserts: must read labels, ingredients, compositions, etc... Gluten and lactose intolerance affects a significant part of the population. This brings many concerns, especially to parents of children with these allergies.
We want to give you two examples of simple and delicious desserts that you can develop for you and your family. 2 Delicious cakes without gluten or lactose

Two very common intolerances: gluten and lactose:

Gluten-free: children or adults on gluten intolerance is basically due to their inability to digest one of its components, better known as gliadin. Whenever these people eat it, very serious damage occurs in the intestine. It's a very complex reality: should avoid in your diet all proteins containing wheat in its interior.
Lactose intolerance: this condition has its origin in the ezima lactase. When we eat milk or any of its derivatives, in our intestinal microvilli this enzyme acts metabolizing lactase (milk sugar). The problem is, when we produce this enzyme in very small quantities. We stopped to digest lactose and arise such problems, such as: stomach pain, gas, discomfort, inability to absorb nutrients, etc... In general, we could even say that our body has a natural lactose intolerance, since it comes from a foreign agent and of animal origin.

1- Carrot and ginger cake:

150 grams of grated carrot
200 grams of rice flour
150 grams of brown sugar
40 grams of margarine (taking care that it does not contain milk)
2 eggs
1 tablespoon of ground ginger
1 sachet of baking soda or "Yeast Royal"
2 tablespoons of liquid caramel
2 tablespoons rice milk

For coverage:

3 tablespoons of carrot juice
8 tablespoons icing sugar (confectioners sugar is a little more finite than normal and is used primarily in baking. If you don't have it by hand, you need only mix the sugar with cornstarch and blend until obtaining a fine powder. You can do this with any kitchen robot, as, for example, with Thermomix)

Elaboration:

We preheat the oven to 200 degrees.
We started to grate the carrots; We will try to do to stay well finite.
Now, in a bowl or a bowl, put the flour, the yeast and sugar. And mix well.
We then introduce the margarine, whisking all the ingredients.
Then, add the eggs, carrot and ginger. Continue stirring.
We will see that the mass is becoming thick enough. It is time to drop the rice milk and caramel. So the paste will be lighter, pleasant smell and texture.
Now we put the oven at 150º and introduce the cake 30 minutes into a mold.
Finally, we will make the coverage of this tasty cake. Simply mix juice of carrot with the icing sugar until right consistency. We can dump it on the cake when cool. Without a doubt, this cake without gluten and lactose, made with carrot, will be the taste of your family.

2- Chocolate and banana cake:

Ingredients:

75 grams of rice flour
75 grams of cornstarch (corn flour)
2 ripe bananas
100 grams of sugar
1 sachet of baking soda (also known as "Royal yeast")
4 teaspoons of cocoa powder (remember that the healthiest is black and sugar-free chocolate. Anyway, when we buy it, we will have to review that do not contain traces of gluten or lactose)
1 teaspoon vanilla
2 tablespoons of liquid caramel
100 grams of water
100 grams of rice milk (if you don't have rice milk, we can put 200 grams of water.)

Elaboration:

We preheat the oven to 200ºc.
In a bowl, add the flour, the sugar, yeast or baking soda and powdered chocolate. Mix everything until it is in a uniform way.
Now we start to beat a container bananas with rice milk, the water and candy.
Then pour this milkshake of banana along with the mixture of flour and cocoa powder. We mix it all very well.
We took him to a mold and bake it for 45 minutes.
To cover the cake without gluten or lactose:
30 grams of margarine (without milk)
3 tablespoons cocoa powder
2 tablespoons sugar
Grated coconut
We carry (less coconut) ingredients to fire in a pot that will mix well. Once well homogeneous, we pour this liquid over cake. Finally we can garnish with grated coconut.
